Course Overview

Toddlers consume approximately one-third of their calories as fluid, emphasizing the need for caregivers to provide nutrient-rich drink options to support growth and development. Supermarket shelves contain a wide variety of different beverages, including juices, milks, sports drinks, and other "hybrid" beverages with label claims often leading to consumer confusion regarding choices that promote health. Fruit drinks, soft drinks, or other beverages not only lack nutrition and displace more nutritious beverages, but also can cause harm, contributing to obesity and tooth decay. Assessment of beverage intake, including juice, sweetened beverages, and milk, is necessary to nurture the development of positive eating habits during the transition from the liquid-based diet of the infant to a nutrient-rich, varied diet of a toddler.

She has developed school nutrition curricula and a weight control program for children with autism spectrum disorders. She has published in leading professional journals and written book chapters, and is a frequent presenter at regional, national, and international conferences.
