Summary:

Dietary fat plays an important role in a healthy diet. In recent years, the number of studies describing the health-promoting benefits of omega-3 fatty acids has increased substantially. Reported health benefits include improved serum cholesterol profiles, stabilized dysrhythmias, reduced inflammation, regulated endothelial cell function, improved insulin sensitivity in patients with type 2 diabetes and enhanced immune response. Walnuts are the only tree nut containing a significant amount of ALA, the plant-based omega-3 fatty acid. Numerous studies have shown that adding walnuts to the diet produces favorable health outcomes, including lower total and LDL cholesterol levels, improved LDL:HDL ratios and a reduction in inflammation (inflammation is associated with an increased risk for heart disease).

Objectives:

The goal of this walnuts and fatty acids continuing education course is to develop an increased understanding of omega-3 fatty acids, their important dietary sources, and the role these foods and their accompanying nutrients may play in health promotion and disease prevention. After completing this course, the student will be able to:
  • Identify the different types of essential fatty acids and their plant and animal sources
  • Explain the health benefits of omega-3 fatty acids, nuts and walnuts
  • State the recommendations for consuming omega-3 fatty acids and walnuts and discuss ways to incorporate them into the diet
