Exposure to toxic chemicals and environmental pollution results in the formation of unstable molecules in the body known as free radicals. Free radicals are also formed during the process of normal metabolism. Oxidative damage from the formation of free radicals destroys cell membranes and can lead to cancer, heart disease, inflammatory disorders and other chronic medical conditions. To prevent this damage, antioxidant nutrients must be present in the body in sufficient amounts to neutralize free radicals. This course discusses the latest research on the consequences of free radical formation, the role of specific antioxidants in disease prevention, the foods that supply antioxidants in the diet, and the latest expert opinion on using dietary supplements to fight the effects of free radicals and support good health.
The goal of this continuing education program is to provide dietitians with information on vitamins and other nutrients that function as antioxidants and their roles in preventing disease. After you study the information presented here, you will be able to:
- Define free radicals, oxidation and antioxidants and explain how they affect the body
- Discuss the different antioxidants, their mechanism of action and possible health benefits
- Illustrate to patients the potential role of vitamins A, C, E, selenium and specific phytochemicals in the prevention or treatment of medical conditions
