Summary:

For older adults with Alzheimer’s disease and other types of dementia, including those in long-term care facilities, the ability to prepare and consume meals can be compromised, making mealtime challenging and even frustrating. Alzheimer’s disease symptoms, combined with decreased appetite as we age, can lead to malnutrition, dehydration, increased risk for infection, poor wound healing, low blood pressure, and other complications. While maintaining an optimum nutritional status will not fully prevent weight loss or reduce the progression of the disease, consuming a healthy diet can help promote overall health, improve older adults’ ability to cope, help curtail some physical and behavioral problems, and contribute to quality of life. Healthcare providers play an important role in promoting adequate intake and identifying eating problems in people with AD. 

Objectives:

The goal of this course is to understand the challenges of feeding people with dementia and learn strategies to improve food and nutrient intake in the population. After studying the information presented here, you will be able to:
  • Explain the changes in the brain associated with dementia
  • Discuss the signs and symptoms of the stages of Alzheimer’s disease
  • Identify the effects of anticholinergic drugs on Alzheimer’s dementia
  • Describe the effects of dementia on self-feeding at various stages of the disease
  • Use techniques to assess and care plan for residents with dementia
  • Be able to substitute finger foods for other menu items
  • Explain how laboratory values are used for assessment of dementia patients
  • Evaluate the dining environment for successful food intake
  • Review the implications of feeding end-stage patients with Alzheimer’s disease
  • Use the survey regulations required by the Center for Medicare & Medicaid for residents of long-term care facilities
