Course Overview

How many times are you asked nutrition questions and are not sure of the answer? While you don’t specialize in nutrition, clients think you should have answers to their nutrition questions. This course will provide you with a foundation in nutrition science and how it applies to keeping people healthy. It explains basic principles and terminology, and applies those concepts to real-life situations: dietary guidelines, heart health, weight and body composition, and bone health and osteoporosis. This course enables fitness, health and foodservice professionals to feel confident in their ability to transmit reliable general nutrition information to their clients, and to present special diets to clients by understanding the concepts behind them.

About the Course Author

Dale Ames Kline, MS, RD, LD, has created continuing education programs since 1984. A former hospital chief clinical dietitian and nutrition educator in a state WIC program, she has written, edited, and presented numerous continuing education seminars and home study courses and has lectured before international, national, state, and local groups of medical, fitness, and nutrition professionals. Kline has been active in local, state, and regional dietetics associations; was named "Recognized Young Dietitian of the Year" in 1984; and was awarded "Outstanding Nutrition Entrepreneur of the Year" in 2001 by the Nutrition Entrepreneurs Practice Group. She was elected as a Professional Issues Delegate to the House of Delegates of ADA in 2003. Kline resides in Upstate New York and the U.S. Virgin Islands; she holds a BA from Tufts University and an MS from the University of Missouri. Jennifer Koslo, PhD, RDN, CSSD, ACE-CPT, is an adjunct nutrition professor, writer, and private-practice dietitian who specializes in sports nutrition. She has more than 20 years of progressive experience in the fields of nutrition, fitness, wellness, public health, and education in the United States as well as overseas. She provides individualized nutrition coaching for clients, conducts nutrition assessments (including health, medical, food, and exercise history) and then creates individualized nutrition and exercise plans, menus, and client-tailored resources.     Describe how food is absorbed into the body; Differentiate among saturated, monounsaturated, omega-3 and omega-6 polyunsaturated fats, and three food sources of each type of fat; Discuss how the body regulates food intake and how that affects dieting; "Discuss the concept of ""oxidative stress"" and how to minimize its effect on health"; Evaluate the nutritional composition of foods, evaluate healthful and unhealthful food choices, and be able to substitute more healthful foods in the diet; Explain how nutritional excesses contribute to diseases, such as obesity and heart disease, and how nutritional deficiencies can contribute to diseases, such as osteoporosis; Explain the concept of nutrient density and why it is important; List three functions of a body cell and the six major components of food; Match a list of vitamins and minerals with their functions in the body; State three reasons why adequate calcium intake is important and explain why it is especially important for young women to consume adequate dietary calcium
