Course Overview

Cultural competency has never been more relevant to healthcare practitioners than it is today. Considering the cultural beliefs, habits, customs, and practices of people from different ethnic backgrounds is vital to not only effective communication, but also effective healthcare. The delivery of culturally competent care is essential to ensure positive healthcare outcomes and reduce health disparities. This course will focus on cultural competency at the practitioner level and will increase awareness and knowledge of cultural health beliefs, traditions, foods, and food habits of various cultures. Each chapter of this course will discuss the health needs of people from different cultures supported by research. Practical information is provided for the application of the principles covered in the course including suggested communication strategies for each cultural group.

Jennifer Koslo, PhD, RDN, CSSD, ACE-CPT, is an adjunct nutrition professor, writer, and private-practice dietitian who specializes in sports nutrition. She has more than 20 years of progressive experience in the fields of nutrition, fitness, wellness, public health, and education in the United States as well as overseas. She provides individualized nutrition coaching for clients, conducts nutrition assessments (including health, medical, food, and exercise history) and then creates individualized nutrition and exercise plans, menus, and client-tailored resources.     Compare the differences in census, morbidity, and mortality data between the most prominent immigrant groups in the United States.; Define the terms culture, diversity, multiculturalism, cultural blindness, cultural sensitivity, health disparities, and cultural competency.; Demonstrate an understanding of the roles and responsibilities of nutrition professionals in cultural competency and effective communication.; Describe and distinguish the concepts of generalizations, stereotyping, and intra-ethnic variation.; Discuss, compare, and contrast Anglo-American and traditional cultural values and attributes.; Explain the value and importance of integrating cultural competency in the education and training of health professionals as well as developing individual and organizational cultural competency.; Explain why cultural values, more than income or race, can determine the quality of healthcare an individual receives.; Identify 3 concrete strategies for incorporating cultural competence into training and education of students, interns, and/or colleagues.; Identify at least 5 food-related behaviors or beliefs commonly associated with each ethnic group discussed and structure nutrition interventions to meet their needs.; List at least 5 foods and 2 cooking methods prevalent in each culture discussed in the course.
