Summary:

Plant foods are a hot topic again, this time for the protective benefits of their fiber. We know that plant foods are low in calories and rich in micronutrients and phytochemicals, encourage satiety, and “keep us regular.” Increasing evidence shows that dietary fiber (both soluble and insoluble) plays a multifactorial role in the battle against the No. 1 cause of death worldwide: cardiovascular disease. Yet the majority of Americans consume less than half the recommended intake and do not understand the importance of dietary fiber to health. This course explains the health benefits of fiber, offering healthcare practitioners the opportunity to encourage their patients and clients to increase their intake of fiber-rich plant foods.

Objectives:

The goal of this continuing education course is to inform and update registered dietitian nutritionists (RDNs) and other healthcare professionals about the role dietary fiber plays in cholesterol reduction and the prevention of heart disease. After studying the information presented here, you will be able to:
  • Explain three ways dietary fiber may protect against cardiovascular disease (CVD)
  • Describe the predominant way that viscous fibers are thought to lower serum cholesterol
  • List the Adequate Intake levels for dietary fiber for adult men and women
