There is a growing interest by athletes and other people in the performance-boosting benefits of dietary nitrate in the form of beetroot juice. Continued research supports the rapid advances previously made in the understanding of how dietary nitrate intake can lead to increased nitric oxide production. A diet rich in dietary nitrates has been shown to provide improvements in athletic performance as well as blood pressure and cardiovascular risk factors. Through a review of the most current information on the role of dietary nitrates, healthcare professionals can increase awareness of how nitrate-rich vegetables improve metabolic outcomes for athletes and others and which foods are the best sources of dietary nitrates. Increasing dietary nitrate intake may help athletes improve their performance.

The goal of this continuing education program is to explain the role of dietary nitrates from plant foods in lowering blood pressure, reducing the oxygen cost of exercise, and improving athletic performance. After studying the material presented here, you will be able to:
  • Explain how dietary nitrate increases nitric oxide production and reduces blood pressure
  • Describe how dietary nitrate enhances exercise performance
  • List four good sources of dietary nitrates
