How many times are you asked nutrition questions and are not sure of the answer? While you don’t specialize in nutrition, clients think you should have answers to their nutrition questions. This course will provide you with a foundation in nutrition science and how it applies to keeping people healthy. It explains basic principles and terminology, and applies those concepts to real-life situations: dietary guidelines, heart health, weight and body composition, and bone health and osteoporosis. This course enables fitness, health and foodservice professionals to feel confident in their ability to transmit reliable general nutrition information to their clients, and to present special diets to clients by understanding the concepts behind them.


The goal of this course is to provide health and fitness professionals with an understanding of basic nutrition principles and terminology to enable them to apply basic nutrition principles at work and home. After studying the information presented here, you will be able to:
  • List three functions of a body cell and the six major components of food
  • Describe how food is absorbed into the body
  • Match a list of vitamins and minerals with their functions in the body
  • Discuss the concept of “oxidative stress” and how to minimize its effect on health
  • Explain how nutritional excesses contribute to diseases such as obesity and heart disease, and how nutritional deficiencies can contribute to diseases such as osteoporosis
  • Discuss how the body regulates food intake and how that affects dieting
  • Differentiate among saturated, monounsaturated, omega-3 and omega-6 polyunsaturated fats, and three food sources of each type of fat
  • State three reasons why adequate calcium intake is important and explain why it is especially important for young women to consume adequate dietary calcium
  • Explain the concept of nutrient density and why it is important
  • Evaluate the nutritional composition of foods, evaluate healthful and unhealthful food choices, and be able to substitute more healthful foods in the diet
